Abstract

If the protein and surfactant have opposite charges, the adsorption of the complexes of globular proteins and ionic surfactants leads to a maximum of the dynamic surface elasticity corresponding to the destruction of the protein tertiary structure. If the oth solutes are similarly charged, the maximum can appear only at the high solution ionic strength.
