Abstract

The adsorption of the complexes of globular proteins and ionic surfactants leads to a maximum of the dynamic surface elasticity corresponding to the destruction of the protein tertiary structure. The peculiarities of the protein-surfactant interactions influence the number of peaks, the ansolute values of the dynamic surface elasticity and the adsorption rate.
